O is more than just a sound or a letter; it is a word. In Turkish, it is the shortest word, meaning he, she, it, that, and those. O makes no distinctions; it represents everything and everyone.
Anatolia inspires us. The ancient history of the region, located between the Black Sea, the Aegean, and the Mediterranean, is reflected in our dishes—always with a contemporary twist. We bring meals from the past into the present. Sometimes, we break with tradition, only to embrace it again. That is the essence of O: always in flow.
Maksut Askar is the driving force behind O, known for his Michelin-starred restaurant, Neolokal, in Istanbul. O is also an ode to migrants who not only bring their lives but also their flavors and cooking techniques to a new land.

Bakery & Cafe
In the museum café, you’ll taste the flavors of Anatolia’s melting pot. The menu features sandwiches, meze, and hot dishes – from a generous breakfast with fresh cheeses, olives, honey, herbs, and homemade jams, to comfort food like lentil soup and smoky eggplant. The bakery focuses on ancient grains such as Sarı Kılçık, Kara Kılçık, and Siyez. Askar bakes artisanal bread here – also available to take away. You’ll soon find Turkish street food classics like simit and börek on the shelves as well.
Maksut Aşkar
In 2014, Maksut Aşkar opened his restaurant, Neolokal, inside the SALT Galata Museum in Istanbul. That same year, Aşkar was named Chef of the Year by Time Out magazine. Since its opening, Neolokal has received numerous accolades, including several mentions in The World’s 50 Best Restaurants awards. In 2022, Neolokal was awarded both a Michelin Star and a Green Star.

O Anatolian Café & Bakery is located inside Fenix. This museum tells stories of love and farewell, of coming home and feeling at home, of navigating identity and the search for happiness. Stories from the past and the present. From here and elsewhere. With its Anatolian cuisine, O is a fitting and flavorful addition to your museum visit.
